Another one is - if it is REALLY fresh, there will be sap exuding from the bottom of the stalk. If the bottom of the stalk is dry and woody - it is getting on in age!

Hello! Spring time is asparagus time. Do you consider asparagus paleo and do you like/eat it? How much carbs does it have and is there a carb difference between green and white asparagus? cheers Marc

It's friggen delicious on the grill with some oil and spices -- eat as much as you want it's definitely paleo just like pretty much all vegetables. Just make sure you pee in a well ventilated bathroom -- asparagus pee FTW.

I've still never tried the white asparagus. I'll probably try it at some point, but right now I don't see the point.
