With ground meat (beef, bison, etc.). Does anyone know how I could accomplish this? Form bars and bake? Dehydrate?

I would recommend Pemmican: 4 parts dried crushed meat, 3 parts crushed dried fruit/nuts (bit more fruit, figs work well for pemmican), and enough melted tallow/fat/lard so it can solidify together - cool it in the fridge. om nom nom

isn't this the same road Atkins went down? It's a candy bar, even if you call it a caveman bar (or a low glycemic index meal replacement). Better than a sharp poke in the eye, I guess, but still.

I don't think fiber counts as carbs, it is just food for gut bacteria. It's fermented by said bacteria into short chain fats, so you can actually get a few calories from it I believe.

The best protein bars are the ones you make yourself, as then you have control over all the ingredients. I've made these bars from Mark's Daily Apple and they were pretty tasty and easy to make. The recipe includes the nutrition info at the end. (more)
