I am wondering if it is completely normal to have some undigested material in a bowel movement? Are there certain things that just do not digest due to fiber type/content?

My opinion is no, if you eat something and it isn't fully digested, then you either have a problem digesting that specific type of food, or have some problem with your digestion generally that is not allowing you to digest what you eat.
While it might sound kind of silly or gross, there are web sites and reports that describe what good bowel movements should be like. I have Celiac so I might not be "normal", but anytime I eat nuts, corn, bell peppers, too much lettuce, carrots, or brown rice...it ends up in my stool undigested.
It's actually nice because I can sift it out and re-eat it to get the remaining nutrients. Just kidding, I flush it and then curse my digestion.
I do not digest bell peppers, but I have intestines destroyed by gluten, so I'm not exactly normal.
Depends what it is, but for instance when we introduced grapes to my sons diet we noticed the skin was never digested and came out whole...this also happened with apple pieces. We removed the things from his diet that he was not digesting and his BM's improved in consistency.
