Only if it is paleo bread and even then I would be careful if weightloss is your goal. It is easy to fall back into old habits. Gluten free bread tends to be loaded with starchy grains and calories and carbs.

Sprouting does get rid of some, but not all, of the phytates, but the gluten is still there, which can't be removed by sprouting, so no, not paleo, still harmful. Best to avoid it.
