I live in Nepal and have no access to grass fed meat, at least not meat that I'm used to. Does anyone know anything about water buffalo meat? Would the bones be acceptable for broth making? The water buff meat that I can buy in the store is not... (more)

I don't know anything specific about water buffalo, but I do know it is a ruminant. If it has been fed it's proper diet (grass?), it should be a pretty awesome food source. I say figure out how they raise the animals, and go for it. If they feed... (more)

What a great question! Since those are the choices, I would go with the buffalo, matching hooved meat source with hooved meat source. Once you grind the meat and make meatballs, a different cooking time will be appropriate. The Healthy Buffalo... (more)

Sorry if this has been asked before but I just picked up some buffalo heart (frozen). I am wondering if anyone has any suggestions for the best way to cook it? Thanks in advance.

I like heart either sliced thin and quickly seared on both sides, leaving it fairly rare, or cooked sous vide at 134 degrees for 48 hours and then seared off.

Does anyone perhaps know where to source grass-fed beef in Thailand? Better yet would be water buffalo but it's not too easy to come by.

Is it Paleo? Or, do you know a buffalo sauce that is paleo. I think Buffalo sauce is addictive, sometimes I crave buffalo chicken for weeks at a time.

Yes buffalo sauce is Paleo if you consider dairy to be in your diet. Combine 1 part unsalted butter with one part franks red hot. (Aged Cayenne Red Peppers, Distilled Vinegar, Water, Salt, Natural Flavor and Garlic Powder)
