Consider fermenting foods that haven't been sterilized. Canned foods have long shelf lives precisely because the canning process cooks them under high heat just long enough to kill all bacteria, fungi, etc... So if you do want to ferment those... (more)

A pound of red cabbage is virtually nothing. About 35g of carbs, and the calorie content of 3-4 strips of bacon. Maybe you're low energy because you're not eating enough?

3 days? Not long enough. Give it at least a week. The lactobacillus need more time to flourish, make their acid, and kill the nasties.

Cabbage is best cooked in smoking hot oil, e.g. a wok over a Chinese-style "turbojet" burner. Cabbage cooks in under a minute this way and stays crispy.
