How much should you weigh? Let BMI be your guide: BMI of 20-25 (normal weights) for your height: 150-185 pounds. Get a trainer, get a nutritionist if you're really having issues with weight and performance.

Online calculators say I should eat about 2600 kcal per day. Instead, I eat between 3500-4500 per day (I don't count on a daily basis, but when I do, that is what it always comes out to) and I am weight constant.

I suspect high serum glucose. Test Blood sugar. Without the presence of carbs, coconut oil is a great way to add calories. (and depending on your genetics, could improve your lipid profile). I could not stop losing weight until I added coconut oil. (more)

Water has no calories and food is mostly water, so yes, you have to take into account water content. If you want to count calories, use a calorie counting website like: cronometer.com, paleotrack.com, loseit.com, etc...
