When you stop eating things (like wheat for example) your body down regulates certain digestive enzymes. This causes digestive stress when you suddenly reintroduce it.

Why stay away from nuts / fruits? Coconut / Macadamia / Olive / Avocado oil is the stuff. I eat fruit / nut fats everyday with most meals. If ice cream is your thing, learn how to make some legit ice cream. I like this graphic. (more)
