don't know about the powdered coconut milk, but on the BPA front; i emailed Spiral Foods about BPA in their cans & they told me; "All spiral cans are BPA free. This includes the coconut cream, milk, tomatoes and Eden foods beans" (more)

Try adding some tapioca starch, too. Coconut flour is too low in starch to allow for sufficient gelatinization.
