I just put unsweetened coconut flakes in a food processor to make "coconut butter". To my surprise it tastes REALLY sweet. Does anyone know if it has a high sugar content? Or its gylcemic index?

It does taste sweet, but I think it's the fact that its pretty concentrated, just like dried fruit tastes sweeter than its fresh counterpart.

Coconut butter is ground coconut meat. Various brands contain more or less fat. A coconut is a seed. The juice inside is the endosperm. It slowly consolidates to form the stuff we call the coconut meat.

Have you been tested for h. pylori antibodies? Coconut oil can be anti-bacterial and while h. pylori has a bad rap, if it's been there a while it's probably moderating the acid content of the stomach for you. Just a theory though.
