When I use canned coconut milk I basically just use the creamy part and toss the watery part because it's kind of disgusting/carby to me. Why is the water from fresh coconut or straight up coconut water you buy so much sweeter? Thanks!

I prefer the freshness and taste of coconut water in young thai coconuts rather than boxes. You also get extra fat in the jelly inside. If you ferment the water with water kefir grains you can lower the sugar to negligible amounts.
