So I absolutely LOVE the scottish buttery shortbread cookies, OMG. However, I want to find a primal recipe that doesn't use almond flour, only coconut flour, any ideas/suggestions?

using only coconut flour? Without almond flour, they would be pretty bad in my opinion. Do you have a nut allergy?

I need to make cookies (or some sort of dessert, preferably not a pudding-type thing) for a vegan and a paleo who is allergic to nuts. Can it be done? Anyone have any good recipes or a link?

It's very hard to work with coconut flour and expect it to act like wheat flour. Coconut flour absorbs a LOT of liquid.

Many here will mention that paleo-ifying bad foods only makes them moderately better. However, we all like to indulge at times. I strongly suggest Elana's Pantry for a cornucopia of recipes both paleo-ified, gluten free, and generally awesome.... (more)

The texture will be different. I've used almond meal for all sorts of baked goods with good results though. The main difference is texture and color. Blanched almond flour will give you lighter cookies, the meal has the skin in it still and... (more)

I bought coconut a while ago, and it tasted like coconut. Now I bought an other brand, same thing, no additives, organic, ... but it doesn't taste like coconut at all. It tastes like ... fat. Is this normal?

If it's expeller pressed, it won't have any flavor. Virgin coconut oil has coconut flavor.

Meh, A pile of omega 6 and fructose, you can get gluten-free cookies that would probably taste better (and they have CHOCOALATE!). I'm firmly in the 'don't smoke candy cigarettes' camp, arsenic is paleo too, still not good idea to eat it.
