New to Paleo... 1st time ordering a cow...

So I'm just starting Paleo and we, as a family are converting. I am contemplating on ordering an 1/8 of a cow....what do I need to know. They website as listed all the cuts that come with it...anything else I need to know. Oh, and I'm also ordering a 1/4 of a hog.... Ah, but it's less energy efficient and the chest one will remain cooler in the even of a power outtage too if I'm not mistaken :).

More useless advise: skip the chest freezer and invest in an upright :P....I hate having to dig through 100lbs of beef to find the cut i was looking for :)

useless advice: Get a chest freezer, then order more meat :)

If you are buying from a farm, I would suggest that you treat them as a craftsman instead of a dealer. That is different from how we usually treat people who sell us food, but very satisfying.

Call them up and talk to them about their cows, visit if you can. Consider buying a sample if available before going "whole hog"
