Fruit AND dried fruit?! Dried fruit is a major laxative and gas-producer. DEFINITELY ditch that. Also might want to ditch the nuts for a while too, they aren't easy to digest. And increase your meat/fish servings from 1 to ideally 3.

Magnesium can be used as a laxative because it does soften stoles. Magnesium oil or Epsom salt baths might help.

If you eat alot of nuts (as many paleoists do) that might be the reason. Many people are sensitive (allergic) to nuts (or certain kinds of nuts)

I am also considering going low-FODMAP (but your sample diet doesn't look all that FODMAP-y) but am playing with decreasing fats & increasing veggies & starches first; too much fat can promote too much GI motility.

It's most likely a die-off reaction from removing starches and other carbohydrates (fruits and vegetables are mono-saccharides so are fine). It's likely you had a gut flora inbalance that is now correctly itself.
