Probably the fat. Coconut oil is very well known for a laxative effect if consumed in 'large' amounts, which can be as little as a TBSP.

Go see different Doc if you don't like the one you got. You may consider trying some Digestive Enzymes along with Betaine HCL/ Pepsin "they sure help me " and good quality Probiotic .

Is your version of paleo very low carb? I found I had the same problem but adding back potatoes, white rice and other none gluten carbs pretty much resolved the issue. VLC is not for everyone.

The answer is that too much fat too quickly causes steatorrhea Fiber has very little to do with it. You could have a higher fiber, low (available) carb diet - i.e. a ton of broccoli, and very high fat and still have loose stools. (more)
