Everyone is different. In this respect, I recommend trying a couple N=1 experiments where for a couple weeks, you limit fruit and increase your starchy vegetable consumption, and then try the opposite for a couple weeks.

I second the water! Drink plenty of water in the morning. You lose a lot of water in the night, and your body continues to detox until you eat, so you want water to allow for more flushing of toxins. Going to bed well hydrated is important too. (more)

To continue leaning out and to also up your carbs you'll probably want to drop your total fat intake. Simply, replace some of your fat calories with carb calories and give that a shot. Works for me.

You can't calculate that because people burn fat at different rates. Another way of saying that is that people can burn fat up into different heart rate ranges. 100 miles probably shouldn't take 9hrs either.
