I would like to make a Paleo Dessert for Mothers Day. Any Suggestions? Can I substitute almond flour in a recipe that calls for Tapioca Flour, or will it not stick together very nicely? Just my guess. At least not for someone on a SAD diet.</p> <p>I recently came across a recipe for lemon meringue cookies and tried it with half the sugar called for in the recipe. It was very delicious and still a bit too sweet for me. With that said I'd like to recommend The Gluten Free Almond Flour Cookbook. I sub out the agave for honey since agave is pure fructose and that messes with my tummy. I made a wicked chocolate cream pie from her book which is also dairy free. Give yourself lots of time since it's all from scratch. </p> <p>Besides making the pie crust from scratch you can also consider store bought if you're near a Whole Foods. I know they carry gluten free pie crusts but I'm pretty sure they have other types of grain in them and butter. You should be able to translate for rhubarb. Although getting enough sweet for rhubarb strikes me as a challenge. Some ideas:</p> <ul> <li>Purchasing GF molasses cookies and filling with strawberry ice cream. GF sugar cookies with lemon ice cream. Coconut macaroons with chocolate OR the macaroons with a variety. I don't know where you live but Haagen Dazs has one called "5" that is simply 5 ingredients. Not doing dairy the sorbet will work. Or make your own!</li> <li>Coconut milk pana cotta with fresh fruit and mint or do a strawberry rhubarb compote with a little balsamic</li> <li>Berry platter with broken up pieces of different types of dark chocolate </li> <li>Dip strawberries in chocolate </li> <li>Homemade chocolate truffles - roll in different bits: dried coconut, smashed nuts</li> <li>Pavlova and fresh fruit </li> </ul> <p>Or my absolute favourite in the entire world: a bowl of fresh strawberries, sliced, topped with whipped cream and a little chiffonade of mint. And a big spoon. </p> <p>Any of these with a nice bottle or two of Cava and you're done. Good luck!</p>
