I said 'mostly' because I don't want to be evangelical about being paleo for the cake and ice cream. I think once you've moved on to 'paleo baking' it's really a stretch to truly be paleo anyway. But I personally think it's okay to splurge every now and then and I don't think that it's the end of the world. Actually, if I didn't feel physically sick from eating gluten and dairy then I would just make a regular cake. So basically, I'm wondering if anyone has a really great chocolate cake recipes. I can't tolerate milk, but butter is fine. I don't mind using sugar either, or baking soda/baking powder. I even left out butter by accident and it came out nice. dont think you need oil or butter because it's nut flour not regular (something to do with gluten issues) of course, if you want more greasy, then go for it. i make this for my kid and she is a picky eater and approved, even with half stevia in it.</p> <p>2 cups almond flour/meal 1/3 cup unsweetened cocoa 1 1/2 tsp baking soda 1 tsp vanilla 1/4 tsp salt 4 eggs 1/2 stick (2tblsp) butter or 1/4 oil (optional) 1 1/4 cup sugar (i substituted by using 1/2 sugar and 8 packets of stevia leaf extract) 1/2 cup water (if using any liquid sweetner, reduce water or eliminate altogether)</p> <p>Preheat oven to 350 degrees. Grease an 8 or 9 inch cake pan or brownie pan. Mix all dry ingridients together in one bowl. In another, mix all liquids then add to dry bowl. I did not use an electrix mixer since i didn't own one - used hands and whisk to stir for a few minutes to blend.</p> <p>bake for 25-35 mins at 350 deg. or stick a toothpick in it, if it's clean, it's done.
