<p>I'm not actually planning a wedding yet but I'm expecting a ring any day now... I mean he asked for my ring size! He calls my mother "mom!" I mean, come on!</p>
<p>Anyway. I'm grain free. I'm also highly allergic to coconut & almonds. So that's out.</p>

<p>~ You can use the crust recipe above, then cover the bottom of a springform tin with it. Then fill with lightly cooked fruit - like a whole bag of apples cooked for a few minutes in a saucepan with cinnamon and spice and then bake it all for about 45 mins. Not wedding cake level of poshness, but still yummy nonetheless :)</p>

Did it for my grandmas big 80th bash, with a beautiful chocolate ganache, decorated with borage flowers. It was lovely and everyone enjoyed it, young and old.</p>

A lot of women get caught up in it, but the truth is, if you have a big wedding (100+ guests) there will be so much going on that few people will notice you cutting the cake, and even fewer will care if you even eat any.</p>
<p>Make sure you are having a cake because you want one, not because it's what seems normal. We did not have a wedding cake and everyone gave exactly zero fucks. The Wedding Industrial Complex will try to sell you "tradition" like the government pitches whole grains. Your wedding will be fab, paleo or not, because you're committing to the love of your life. <li><p>Panna cotta (cream,gelatin,sugar) I've used David Lebovitz's (http://www.davidlebovitz.com/2009/04/perfect-panna-cotta/) recipe with a LOT less sugar. And then a fruit topping.</p></li>
<li><p>flourless chocolate cake - I know a few people mentioned this and you can always dress it up. I've done the one from America's test kitchen - which you have to google to find a free copy. </p></li>
<li><p>creme brulee - I think someone mentioned this. Or pot de creme. While this would be a pain in the butt. You could tier them and then put whatever your flowers are on the various tiers. But, no cake cutting.</p></li>
<li><p>Pavlova - it looks cake like. I haven't made it but there was an interesting recipe on saveur (http://www.saveur.com/article/Recipes/Pavlova). It needs tweaking. </p></li>
<li><p>Ice cream cake. </p></li>

It is one day, enjoy your wedding cake! Going gluten free allows you to do this without feeling like crap after. Also, if you talk to the baker you can usually get them to sub out ingredients and use honey instead of sugar. Also, go for the buttercream frosting, fondant tastes like sugary play-doh.</p>
