Hi everyone I'm from Italy.
I'am 19 , and I always been an iBS sufferer , now with paleo , the thing are better for the 70% , but not for the 100% .
I usually feel brain fog , I can't decide if the fault is about the low carbs.
I eat
Meat - fish , olive oil , turmeric , and the only vegetables is the carrot , I eat it everyday.
I don't eat any kind of fruits , cause I don't know why , 1 months ago I tried to eat blueberries and they gave me a lot of hair in my guts.

I came from a chocolate (dark ) dipendence , and today is the 3rd days without it , It's really strong to avoid it for me , I hope I will not give up.

I also started to take magnesium ( 2 spoon ) per days , since 3 days , for my insomnia.

I also feel preety tired since months , but I don't know if the diet can be the cause.

I'd be happy to learn something from this great community!

Ops , obviously I avoid all the anti paleo foods! ( cereals , dairies , legumes and sugars)

Some things that come to mind from my reading and personal experience:

1: You may need more salt and water. Increase your intake of these and see if it helps. Drink many many glasses of water every day to make sure you're not getting dehydrated. Dehydration can cause low energy, and salt deficiency is common with low carb diets like paleo (some people have to put a few pinches of salt in their palm and lick it a couple times a day in addition to their regular consumption to combat the salt wasting common in ketosis/low carb)

2: You may need more calories, particularly from fat. - You say you're eating olive oil but it may still not be enough. Try tinkering with your macronutrient ratios to get what's right for you (Protein, fat, carbohydrates) and if need be, grab a spoonful of coconut or olive oil (maybe some good quality lardo!?) with meals to get you where you need to be.

3: You may need more nutrition-dense foods in general - b-vitamins (especially b12), and minerals like zinc, copper, and iron come to mind. If you don't already, try going for more liver, organ meats, bone broths, oysters, sardines, salmon, etc (which should be easy to come by in most areas of Italy if that's where you're at)

Hopefully you'll be right as rain and no longer tired with some tinkering!

Try eating potato or sweet potato and see if you feel better. Long term, you need to eat a more varied diet to ensure proper nutrition.

Since you are already eating simple, try entering your diet into cronometer.com to see what nutrients you are missing.

It's great that you have removed toxins from your diet, and I hope your gut is healing and your ibs problems disappear completely!
