I also view Paleo baking as a gateway that can get out of hand. However, there are some things that many of us have a deep emotional connection too. I used to love tomato soup and a grilled cheese sandwich which is not exactly paleo. My wife made a loaf of coconut bread and using some panchetta, prosciutto, and a nice cheddar made a phenomenal "grilled cheese sandwich" to go along with the tomato soup. While not the strictest adherence to a primal diet, an occasional treat (especially one made this way) is not going to kill you. I can't imagine it tasting very good either, or satisfying one in the same way that a starchy piece of bread would. In fact, I'd probably end up eating the whole loaf and then feeling like I just wasted my money.
