But I have a question - the holidays are coming up, I live in the south, and cornbread dressing is commandment #1 in the southern holiday cooking bible. I LOVE it, look forward to it between holidays every year, and now find myself anticipating either a miserable thanksgiving or, well, cheating. I happen to be the cook so I do control the ingredients, so.. it's a long shot but does anyone know of a paleo dish that would work instead?
http://paleohacks.com/questions/151879/cornbread-dressing/151886#151886 Answer by dstnyb for Cornbread Dressing dstnyb 2012-09-25T22:58:40Z 2012-09-25T22:58:40Z
My two cents: just make it as normal, eat it and enjoy it during your holiday fare (unless you are actually allergic or severely intolerant of the original ingredients).

I wouldn't try to clone it with almond flour or coocnut flour or whatever. Because -- "flour is flour - nutrient-depleted junk" to quote Peggy Emch (Primal Parent: source). I know a lot of Paleo peeps really get into making substitutions but to me, they are still far, far from eating "like a dinosaur," hunter/gatherer, or any other ancestral entity.

Just be prepared after the holiday celebrations are over, with some good home-brewed chicken stock to help heal and restore your gut.
http://paleohacks.com/questions/151879/cornbread-dressing/151888#151888 Answer by Matt for Cornbread Dressing Matt 2012-09-25T23:24:22Z 2012-09-25T23:24:22Z
Screw paleo on holidays, eat the standard fare, it's not (likely) going to kill you.

Probably the best alternative you could do is make gluten-free cornbread (Google knows how to make this) and use that to make dressing.
http://paleohacks.com/questions/151879/cornbread-dressing/151895#151895 Answer by Beabs08 for Cornbread Dressing Beabs08 2012-09-26T00:05:26Z 2012-09-26T00:05:26Z
IMO, if you want it that badly, just go for it. Don't eat a ton of it, of course, but a few bites won't kill you.

Don't think of it as cheating. Cheating make this sound like a diet. It's splurging!
