<p>Before my Paleo days, I used to make dehydrated kale chips seasoned with nutritional yeast that had a delightful cheesy flavor. They were a fun treat, since I cannot eat dairy or gluten at all and have few crunchy snack options. I haven't used nutritional yeast since shifting to a Paleo diet a couple of years ago. Somehow it didn't seem appropriate. Now I'm wondering if I was too stringent in my limitations. </p> <p>What do you think? Are these "cheesy" kale chips flying in the face of basic Paleo principles? My reasons for not eating grains, legumes, dairy, and artificial stuff are health-based, not history-based if that info helps.</p> <p>Thanks...</p>

<p>Nutritional yeasty has a lot of B vitamins in it (and is often supplemented with b12), which is why vegans love it. Besides being a more highly "processed food," there isn't anything inherently non paleo about it.</p>

<p>i used to make kale chips every day- not kidding. i was seriously obsessed with them. when i stopped using nooch, i noticed that a mixture of tahini and bragg's was very cheesy tasting. </p>
