I push the limits to see what grains/foods I can tolerate and which I cannot. Recently I tried to go paleo for a whole day. At lunch I had vegetables, fruit and flavoured peanuts. Two hours later I'm having intestinal issues followed by muscle pain/stiffness/cramping. My classics signs of eating something wrong. Turns out the flavoured peanuts were a different brand and there was an additional ingredient, maltodextrin. This is hydrolyzed starch, typically corn (my nemesis). They cut the starch up into smaller molecules so it is similar to glucose, easily absorbed and digested. Just what I don't need. As I have said previously I believe my problem relates to how quickly the food is digested. Too fast is bad, like putting premium gas in an old tractor, it is going to run but not well. And the amount of maltodextrin on those peanuts was small, yet it caused a significant reaction. I started looking for maltodextrin in other things and found it in the whole wheat tortillas I eat. After switching tortillas I think now that whole wheat has zero impact with the maltodextrin out. Again processed grains appear to be my issue, whole versions seem fine. Companies can get away with a lot on the nutrition label. The real place to examine a food label is the ingredient list. You'd need several weeks, preferably over a month, free of any problem foods. If you have issues with corn, you more than likely have the same issues with other grains. </p> <p>(Yes, corn is a grain, shocker right! And as everyone has jumped on, peanuts are legumes.)</p> <p>Truth is it takes something like 6 months to remove the antibodies to grains from your body, and thus stop any autoimmune effects.</p> <p>The problem isn't with the starch, it's with gluten, and their analogues which trigger zonulin to open up the gut lining and allow whole, undigested proteins through the blood stream, which, in turn cause the immune system to recognize an invader. The kicker though, is that these proteins (gluten analogues in corn and other grains), are very short, and look a lot like human tissue proteins, so this starts a cascade of autoimmune issues... anywhere from arthritis to lupus, and even MS.</p> <p>Reality is, it doesn't matter what your political views are, whether you're a fan of Paleo, or not, your body will indeed react to these things, and they do cause diseases.</p> <p>Incase you didn't know, the Paleo diet doesn't cure disease by eating certain foods, rather it does this by <strong><em>REMOVING</em></strong> problematic foods that cause the modern diseases of civilization, those that did not exist, except within the last 10,000 years ago. These foods are: grains, legumes, industrial seed oils (yes, including corn, soy, canola, "vgetable" oils, etc.), as well as modern artificial ingredients (MSG, HFCS, color, preservatives, etc.) For some, dairy, nightshades, and eggs can be problematic, which is why for the 1st 30 days, you should exclude those, and slowly add them in, one at a time to see if there's a reaction.</p> <p>Don't be fooled by your lack of reaction to wheat, many people do have reactions to all grains, but it's silent inflammation and they don't actually see it. It causes a range of seemingly unrelated issues such as gall bladder issues, geographic tongue, cold hands, hypothyroidism, brain fog, low energy, migraine headaches, skin rashes, acid reflux, etc. If you're reacting to one, you're likely reacting to all of them to different degrees and have different, but possibly hidden symptoms. Celiac is only one point on a very wide spectrum.
