<p>My jar of coconut oil solidifies in winter and fall. What's the best way to re-liquefy it if I just want to add it to raw vegetables that will be eaten raw? I imagine that a microwave would work well and quickly, but I've always been skeeved out by them and don't even own one. </p>

I put in the amount I want to melt either on the stove in a container in a pot of water or just in hot water on the counter inside separate container. It's works very fast. </p>

Then I pour the oil into an ice cube tray and keep in the fridge. This give me convenient 2-oz portions that I can use one at a time. A few times a week I'll just pop one into my mouth and let it melt.</p>

Walk away for a few minutes and it's liquid.</p>
<p>Incidentally this arrangement is also how I keep small things warm and/or slightly melt cheese while I'm preparing something else.</p>

Note I buy a brand that has returnable glass jars. I either run it under hot water in the sink (if I just want a little bit--and yes my hot water is very hot), set it in a pan of water on the stove and let it simmer (if I want to reliquefy the whole jar), or if the oven is on, I set it on the heat vent in the back. That's for a gas stove. An electric stove should vent the oven heat through one of the back burners--I think it's usually the right one. </p>

Then after it's liquid, I pour it into a square tupperware container. Then I just dig out the solid lump I need with a knife. It melts when it's in the pan, not before. </p>
