<p>Anything by Against the Grain. Made from tapioca starch and mozzarella. Relatively safe, although there's some safflower oil in it, which bugs me. But delicious beyond belief.</p>

It's seriously good.</p> <p>If you don't want to make your own then I second the rec for a TRUE sourdough bread (which you will never find at the regular grocery store) or, if you can find it, a bread like <a href="https://grindstonebakery.com/epistore/?productId=1" rel="nofollow">this</a> that is sprouted gluten-free grains and also soured. If you are in a larger metro area there may be a WAPF kitchen or local WAPF baker (Weston A Price Foundation). </p>

<p>When I really want bread I use this adaptation of the one minute muffin:</p> <p>2 Tbsp almond meal 2 Tbsp hemp hearts 1/2 tsp baking soda (I use Hains, it's grain free) 1tsp oil (olive or CO) 1 egg</p> <p>Mix ingredients well in a shallow wide bowl. Microwave on high for 1 minute. Turn the "bread" out of the bowl and slice in half horizontally. Toast each half until light brown. It reminds me of whole wheat bread. Great when you really crave a BLT!</p> <p>You can use all almond meal or substitute ground flax for any portion of the nuts/seeds.</p>
