For a brief time there are glorious fresh (never dried) purple beans at the farmers market. I intend to enjoy them paleo or not. That being said is there a way to reduce the anti nutrients in them? Some sort of preperation I can do? I have only been able to find instructions for dried beans but these are fresh. I would say since they are fresh they shouldn't be any worse for you than green beans or English peas. A little isn't going to hurt you. CD 2012-10-15T13:07:27Z 2012-10-15T13:07:27Z <p>While green beans (and their purple cousins) and peas are "legumes" from a botanical standpoint, I think it's improper to shun all foods due to their botanical classification.</p> <p>Green beans and peas do not exhibit the same level of anti-nutrients or glycemic reaction that (for example) kidney beans do.
