<p>I use coconut milk for my coffee in the morning and an occasional "berry dessert" but I just noticed that the can says to consume within 2 days of opening. 1 can of full fat coconut milk usually lasts about 5-7 days. Is there a reason for the "expiration" date and am I doing myself any harm by not following it?</p>

<p>I don't know why there is an expiry date, but I tend to respect it as much as possible: I shake the can very well, and put half the content in the fridge and half in the freezer.</p> <p>Even if there is no ill effect from consuming coconut milk after the expiry date, I enjoy it much less, as it tends to become more acidic and less pleasant with time.</p>

<p>Two days is extremely conservative. Even fresh meat can last longer than that. If you transfer it from the original container it should last 4-5 days just fine.</p>

<p>If it's still around after two days (I use a can relatively quickly) I would still use it. I haven't noticed any acidity, and actually like it cool/cold after being in the fridge as some of it congeals and makes for a tasty snack. </p> <p>Still, I drink enough tea/coffee to where that can is gone within the day. </p>
