PortlandAllan2010-03-19T04:36:21Z2010-03-19T04:36:21Z
Coconut milk is mostly water, doctored with emulsifiers, and highly processed to keep it from spoiling. However, the good news is that coconut milk is quite easy to make yourself from dried coconut pulp. More good news is DIY coconut milk is considerably cheaper since you are not paying for all the extra processing or shipping of water.

You can get 100% coconut milk in 12 paper cartons for $13. Well, there's shipping too but that's the cheapest I've found for ready-made coconut milk that has no preservatives, guar gum, or metal can packaging.
