Today I threw together a chicken parmesan casserole dish for the kids I babysit. If it weren't for the breadcrumbs and soybean oil in the tomato sauce, it would've been fairly paleo (there is not one paleo thing or vegetable in their entire house!!) It got me thinking about making paleo casseroles. Probably simple enough? I did a search on here but no ones asked yet. So what are your favorite paleo acceptable casserole dishes? Or some ingredients that would work well?

You could probably get ideas and make some things into casseroles if you wanted.

Its a big hit with every single person (paleo or not) I've ever served it to. its soo yummy. I could eat it every day.
Its called the paleo shrimp, bacon and sausage, squash casserole. I got it from Marks Daily Apple reader cookbook. IF you don't eat dairy, omit the Parmesan.

http://paleohacks.com/questions/41825/paleo-casserole-recipes/198159#198159Answer by Navvi for Paleo casserole recipes?Navvi2013-06-01T15:57:29Z2013-06-01T15:57:29Z
In my house, there are three people. I am paleo, but the others are not. In order to find ways to cook the same meal that we can all eat (and so that my family can have their pasta-filled foods) we tweak almost everything, from spaghetti to casseroles to stews, and here's what we do:

Find your favorite casserole recipe, ours is chicken noodle casserole.
Begin preparing everything as you normally would, but hold out the salt, any sugar if used, and substitute any processed foods such as canned cream of mushroom soup with chicken broth and cream/milk. Most casserole dishes we use have a pretty sturdy filling. Fill with all the typical veggie ingredients and the meat you're using.

Before adding the noodles, whoever is cooking sets aside a serving of casserole in a small baking dish, sprinkles the top with onion, roasted nuts, a bit of cheese, whatever is being used for this particular dish. That is then baked by itself while the pasta and salt-filled casserole bakes alongside it.

You can certainly do this without even worrying about making the noodles for your casserole. I realize it's not a perfect fix, and there would be plenty of people who argue that the cream/milk used is not paleo, but it works for me and still keeps me on my diet without deviating too badly on the occasions we eat casseroles. The best part is you can use these rules for just about ANY casserole dish you find.
