I have researched and dabbled with Paleo in the past, but this is the first time I've actually made the plunge. I have been having some undiagnosed health issues and we're hoping this diet helps. </p> <p>Currently I'm doing no grain, no starchy veggies (so no potatoes, sweet potato, beet, carrot, etc), no fruit and no sugar/sweetener. I can do raw and high fat dairy (though I'm considering taking this one out). ( as an side note: I'm supposed to keep my carbs at less than 45g, protein at less than 50g and get the balance of my calories from fat....)</p> <p>My dilemma is that I'd really like something dessert like. Does anyone have ideas about something that might hit the spot, but not have sweetener? I know that cream has a natural sweetness to it, as does coconut milk... I'm wondering how an ice cream or pudding sans sweetener would taste. Has anyone tried? Tastes pretty sweet to me. </p> <p>If you mix some shredded coconut and coconut milk and add a tiny bit of salt to it, it'll taste pretty sweet too. </p> <p>If you buy some super dark chocolate (Lindt 85%), it's pretty low carb. I have all sorts of associations with nuts and sweets due to candy bars. Almond butter on celery might work - crunchy, nutty, sort of sweet. Also, full-fat yogurt, the kind that has cream on top. I like to just nibble on butter like others eat cheese. :) None of these are particularly sweet, but they somehow quench my sweet tooth. Also, don't forget super dark 72% and greater dark chocolates or nibs. They contain very low sugar and can give you some sweet relief in small doses.</p> <p>I did try freezing some heavy cream in a bowl last weekend. It gets kinda crystally and VERY hard. But if you have an ice cream maker, I don't see why you can't make ice cream without sugar. Coconut milk, egg (whites or whole, it's up to you. Whole makes the icecream richer) and you can flavour however you like. Vanilla beans make a good mix in or you could go for something like fresh mint or even just macadamias as they are quite sweet, for nuts. There are some good recipes for paleo icecream around (just google it). The one I like best from paleodietlifestyle.com has honey in it for sweetener but its optional of course:</p> <p>1 can full fat coconut milk 2 eggs or 4 yolks vanilla bean seeds (or vanilla essence to taste) whatever other flavours you want to add</p> <p>Method - use a double boiler (or a pan with hot water with a bowl on top) to heat the coconut milk, but not boil it. Whisk the eggs into oblivion in a separate bowl. When the coconut milk is hot, add a ladel-full to the eggs and keep whisking. Do this over and over until all the coconut milk is whisked into the eggs. Let it cool down for a little bit, then add your flavours, then refridgerate until cold. Then whack it in the freezer to freeze.</p> <p>So yum!</p>
