<p>So I just got back from a trip to visit my parents where I met up with a friend who was lucky enough to visit thailand for a while. She taught me how to make the green papaya salad and I have a feeling that its very healthy (similar to kimchee I think just not fermented?) as the only ingredients are the green papaya, tomato, carrot, and some anchovy sauce, along with hot peppers. Traditionally, it also contains sugar, but I can see easily replacing that with artificial sweetner. I could seriously eat this stuff every meal and not get sick of it.</p>
<p>Any ideas if this is a good thing to be eating or not?</p>

<p>I know that here we pierce the skin from top to bottom about four times for the 'milk' to drain out, supposidly releases toxins from the ripe fruit.</p>

I use mostly honey, with the occasional maple syrup. Mark's Daily Apple has a great run-down on all these sweeteners and whether or not they raise insulin levels.</p>
