<p>Not knowing where you live, I recommend finding out who the local cheesemakers are, especially those who make either raw milk cheese (hard to find) or at least use milk from grassfed cows. </p>

<p>Dubliner is about as good as it gets from the grocery store imo and pretty damn cheap too. Trader joes havarti and raw pecorino are classics as well.</p>

<p>The optimal cheese for me is the one that's on sale. Recent items in the past-pull-date basket have been Brie, jarlsberg and some Danish blue cheese. I like sheep and goat cheeses, but $15-20/lb seems too high. The main downside of cheese is the high salt content.</p>
