There's about 1 - 2 tbsp of olive oil in each can that I've been mashing up with the sardines to eat on top of spinach, carrots, etc. Since I'm not sure about oxidation/whatever bad might happen during the canning process, would it be better for me to get rid of as much of the oil as possible?
http://paleohacks.com/questions/70860/should-i-drain-my-sardines-canned-in-olive-oil/70877#70877 Answer by Carl_Stawicki for Should I drain my sardines canned in olive oil? Then you can add your own olive oil to the dish. You're in more control of the ingredients.
http://paleohacks.com/questions/70860/should-i-drain-my-sardines-canned-in-olive-oil/70878#70878 Answer by citrusfire for Should I drain my sardines canned in olive oil? citrusfire 2011-10-17T15:05:45Z 2011-10-17T15:05:45Z
If the olive oil were oxidized/rancid, you'd be able to taste it pretty easily.
http://paleohacks.com/questions/70860/should-i-drain-my-sardines-canned-in-olive-oil/70879#70879 Answer by The Loon for Should I drain my sardines canned in olive oil? The Loon 2011-10-17T15:20:12Z 2011-10-17T15:20:12Z
Oxidation occurs when oil is exposed to the elements and air. If the sardines are canned properly, the oil stays fresher longer. You should have no problem if you eat the contents before the expiration date on the can. Enjoy your meal!
http://paleohacks.com/questions/70860/should-i-drain-my-sardines-canned-in-olive-oil/70884#70884 Answer by majkinetor for Should I drain my sardines canned in olive oil? majkinetor 2011-10-17T15:35:08Z 2011-10-17T15:35:08Z
No. You should only drain non-olive oil.
http://paleohacks.com/questions/70860/should-i-drain-my-sardines-canned-in-olive-oil/70931#70931 Answer by Adam Crafter for Should I drain my sardines canned in olive oil? I try to buy sardines in extra virgin olive oil.

I have to read the labels carefully now though - lots seem to be canned in sunflower oil and I've even seen soy oil!
