<p>Hey, I've gotten tremendous responses for all my questions, and again, thanks!</p>
<p>Today, I'd like to know your favorite recipes with under 9 ingredients.
I really don't have a huge amount of time to be cooking, and I'd like to throw a 100% paleo and delicious meal together. Honestly, I get pretty daunted when I see massive lists of obscure (to me) ingredients (arrowroot!?). So, if you'd be so kind, let me know the simplest ways you've found to rejoice in the sublimity that is paleo eating. </p>

<p>Ingredients: 0.5 lb buffalo, summer squash, shallot, garlic, tomato, lettuce, butter, sour cream, rosemary, thyme</p>

<li>Dice shallot, garlic & summer squash and saute in butter till soft</li>
<li>Add buffalo, rosemary & thyme and saute </li>
<li>Spread sour cream over lettuce wraps, add buffalo mixture, top with diced tomatos</li>
</ol>
<p><strong>Lamb and Yam Mash</strong></p>
<p>Ingredients: Should or leg of lamb, yams, butter, rosemary, thyme, garlic</p>
<ol>
<li>Peel and par boil the yams until a fork goes through easily, remove and let sit</li>
<li>Pan sear lamb in butter/rosemary/thyme/garlic, finish in oven @300</li>
<li>Add juices from lamb, and butter to a pan, and mash the parboiled yams in this mixture while adding salt and/or cinnamon to taste</li>
</ol>
<p><strong>Steak and fat</strong></p>
<ol>
<li>Pan sear and grassfed cut with thyme/rosemary/garlic, finish in oven @350</li>
<li>Make a bearnaise or hollandiase sauce and apply it to the top</li>
</ol>
<p><strong>Paleo Boulibaisse</strong></p>
<p>Ingredients: 2 pounds tomatoes, mussels, clams, and a pound of wild caught fish, basil, fennel seeds, saffron</p>
<ol>
<li>Reduce the tomatos on low heat into a sauce, add saffron, basil, fennel seeds and olive oil towards the end</li>
<li>Add all the mussels, clams & fish and stir until everything is cooked and shredded into a fine soup of sorts.</li>

We only do simple in our house. Here's an example of our week thus far: </p>
<p>Day 1) Pot roast lamb</p>
<p>Choose a lamb joint double the size you need. Add to a pot with plenty of parsnips, carrots and onions all rough cut. Add spices/herbs of your choice. Add stock. Cook for three hours or so on a medium heat. If you leave it in longer it won't matter. </p>
<p>Save left over meat, juices & veg</p>
<p>Day 2) Thick soup</p>
<p>Add half of the left over meat and all of the left over veg plus juices to a blender. Blend until quite fine. Heat the resulting mixture in a pan adding extra stock if required. Add cream to taste to make it really luxurious. </p>
<p>Day 3) Lamb Frittata/Omelette</p>
<p>Flake the last of the leftover lamb and fine chop spring onions. Heat some in butter in pan and heat the meat and onions. Break eggs and blend with some cream. Pour egg mixture into your lamb/onion pan and cook till golden brown.</p>
<p>Not only was this quick and simple, it was really very cheap for the amount of meals/portion sizes we got out of it. I love it when lazy cooking is delicious <em>and</em> cheap!!</p>

Skip the cornstarch, use good fats (bacon grease is the Best Thing Ever for wok cooking) instead of peanut oil, use wheat-free tamari in moderation when soy sauce is called for (or skip it entirely), and combine any number of ingredients you like. Meats, eggs, fish, seafood, all kinds of good veg, mild, spicy, garlic, no garlic... it all works.</p>

<ol>
<li>Sauté grassfed ground beef with taco seasoning (the packets are full of yick and weird, so I just make my own with cayenne, chili powder, cumin, salt, and garlic powder - yes, I know this bumps it up to more than 9 ingredients, but it's a one-time expense and time commitment).</li>
<li>Chop or shred crunchy-type lettuce (Romaine, Bibb, greenleaf, iceberg, etc. etc.)</li>
<li>Dice tomatoes, avocado, and red onion. Top lettuce with veg.</li>
<li>Put your now delicious ground beef on your salad, being sure to add some of that wonderful hot fat.</li>
<li>Top with salsa (I use the more sauce-like rather than pico de gallo-like type, since it helps to "dress" it, sour cream/creme fraiche/full fat Greek yogurt (organic and grassfed if you can manage it), and shredded cheese (I use raw grassfed cheddar-just enough to get that taste).</li>
</ol>
<p>It generally takes about ten minutes from pan to plate and has a lot of complexity for something so simple. It also happened to be my meal tonight.</p>

<p>Off the top of my head, my favourite paleo recipes (beyond classically simple meals of grilled meat, eggs and veg) that are an absolute doddle to make are:</p>
<p>Coconut Chicken or Beef Curry: saute diced onion and garlic in a little coconut oil, add diced meat and brown. Add a can of coconut cream and add a cup or water. Add curry powder and other spices, stir well, and simmer for about an hour.</p>
<p>Almond Pancakes: heat some coconut oil in a pan while you mix 30g almond flour with an egg in a bowl. Pour/scrape mixture into pan, and fry. Serve with cinnamon and fruit.</p>
<p>Fruit & Nut Balls: grab any nuts (I like walnuts) and dried fruits (I like dates and apricots), add some cocoa if you like, and whizz everything in a food processor. Roll spoonfuls into small balls, and roll in desiccated coconut. Bam!</p>

<p>Boil a bunch of eggs (at least half a dozen, up to a dozen).</p>
<p>Mayo dressing:</p>
<p>2 raw egg yolks</p>
<p>1 cup of healthy oil of choice</p>
<p>1-2 tsp. other seasoning (tamari, vinegars, etc.)</p>
<p>In a mini food processor, whip the egg yolks alone for 1-2 minutes. Slowly add oil of choice 1-2 tsp. at a time while whipping in between additions of oil, until consistency thickens. Add final seasonings, whip one last time, and dress chopped boiled eggs.</p>
