Is it safe? Erik of Rockford 2012-01-10T12:34:28Z 2012-01-10T13:45:36Z
I peeled an HBE this morning and to my surprise the "white" was all grey! A dark grey at that. I looked at the yolk which was a beautiful creamy yellow, with no green edges.

I was kinda freaked out and discarded it.

Any idea why this would happen? or if it was safe to eat?

I have also found that sometimes there are brown flecks in the whites too. ?

I buy the organic eggs from Cosco.....for now. During boiling the sulfur atoms are liberated and react with hydrogen ions in the white to form hydrogen sulfide (a gas). As gas forms, it diffuses in all directions and some reaches the surface of the yolk, where it encounters iron and reacts to form dark particles of ferrous sulfide. The egg yolk contains iron and the white (albumen) contains sulfur.
