Last night I made a dish that was sort of curry, sort of laksa - organic beef stir-fry strips, with coconut cream, yellow curry paste (I buy one that's just the spices, no oil or fillers), and red pepper, mushroom, onion, bean sprouts. It was good. Sounds weird with the mint, but it's super yummy!</p> <p>I generally eat a meat and fat diet, with veggies used as condiments. I have found if I eat more veggies than just a dash of this or that, I get wicked cravings. Mashed potatoes, too, with cream and the herbed Kerrygold, because my kids love 'em, though I only ate a few bites.</p> <p>It felt very French, very connected to the land. The burgers were made with my favorite new technique: take a hunk of butter and wrap the ground beef around it. Then when you cook them the butter melts into the burger, giving it a richness throughout. No, really, <em>vaca frita</em>, a Cuban dish. I get pre-cooked shredded beef from US Wellness for this and <em>ropa vieja</em>. I have done the "boil an expensive flank steak for two hours, cool, then shred" exactly once. What a pain in the ass.</p> <p>Marinate 1lb shredded beef overnight in 1/4c each lemon &amp; lime juice with plenty of garlic and whatever other spices you want -- I add 1tsp red dried chili pepper, a little cumin &amp; coriander -- then squeeze the juice out of it and pan-fry on low/medium heat in coconut oil with thin-sliced onions til desired crispinesss achieved. <strong>NOM</strong>.
