Underneath the lamb you will see in the picture the offal of the lamb (lungs, kidneys, liver, spleen, heart, pancreas), sliced and tangled together with the intestines, and roasted too (called kokoretsi). We keep the tripe for a soup (called patsas)! I'm much more of a "food = fuel" guy now and if the food is delicious, it's just a major bonus.</p> <p>Best Thing I ever ate - Pre-Paleo: When I was a kid, my grandmother would make dinners of fried chicken, pea-salad (fresh spring peas, onions, grated cucumber and mayo), and pinto beans with rice. I would turn down any meal from any chef or any restaurant for her fried chicken dinners. </p> <p>Best Things I eat currently: Today, I would have to say that slow-cooked meat with broth is one of the top contenders of "my favorite food", particularly oxtails cooked for a day with some acidity (about 1/4 cup of apple cider vinegar), tons of dry rosemary, and about 6 cloves of garlic (all to about 2lbs of oxtails and enough water to cover). </p> <p>Best thing I've ever eaten post-paleo: I made a pesto with mint instead of basil, walnut oil instead of olive oil, and a combination of walnuts and macadamias... all seasoned with a curry spices and kosher sea salt. This I smeared over a leg of lamb and roasted. It was absolutely fantastic and probably one of my most popular recipes... even among non-Paleo family members.</p>
