<p>Bought some fresh spinach and will saute the leaves. What can I do with the stalks though? Is there nutrition there? I was thinking of maybe a spinach stalk cole slaw?</p>

<p>Yep, use it to juice, or put in a smoothie. If you have a powerful blender, it will just blend right in, and you'll get tons of benefits from it. I juice all of the leftover bits of the produce from the day before (broccoli stalks, apple cores, carrot ends, kale/spinach/chard stems, etc.), and it makes a nutritious and surprisingly tasty way to start my morning.</p>
