I was vegetarian for about 12 years, and for the past 2 have been eating seafood. I just started paleo a few days ago and am phasing it in, and decided try adding in some grass fed beef and a small bit of poultry to see if I notice a difference.

Along with some grass fed ground beef and stew meat I picked up a pack of chicken backs/necks. I figure they probably go to waste anyway, were rated decently on the humane scale at Whole Foods, and 3 of them cost under $2.

I'm assuming the best thing to do would be make broth with them, but I haven't cooked chicken since I was 14 (if ever) so I am clueless. I am adding in meat for health benefits, so that is my main goal. Do I use the skin? What the heck do I do with them besides stick them in boiling water? Do I seriously need to cook them for 20 hours?

I've seen several PCOS threads on here ( though most are kind of old) and was wondering who here has PCOS or related issues and if there is any interest in starting an online discussion group related to the Paleo lifestyle and PCOS? I am still new here but paleo seems a million times better than metformin or birth control.

http://paleohacks.com/questions/92681/best-way-to-change-sleep-pattern-between-2-completely-different-timesBest way to change sleep pattern between 2 completely different times?Laura2012-01-25T11:32:08Z2012-04-28T00:04:47Z

I'm going to start a new job in about 3 weeks and I think I will need to get up around 5 or 6am. Right now, i have a twofold problem- I am a night owl and get a second wind around 10 (and find it difficult to go to sleep early) and for the next few weeks i am going to have to wake up at different times.

My dog is diabetic and needs insulin shots every 12 hours. Right now she gets a shot around 530am, and then I get back to sleep at 630 and sleep til 9 (which I know is not great) . I need to shift that to 2 am for when I move and she will get her medicine on my moms shift. That means I have to go back about 30 mins a day and then stay at 2am. Then soon after Ill be shifting back to 5 am.

So, i am going from waking up at 5 to 2 then back to 5 while being a night owl who normally prefers to stay up until 2am.

Any ideas how to make this bearable so that I am not fried when I start work? Already taking magnesium and using sleep mask and earplugs. Not a fan of 4hb 20 minute polyphasic sleep method.

http://paleohacks.com/questions/25377/why-dont-people-consider-seafood-as-being-meat/92915#92915Answer by Laura for Why don't people consider seafood as being "meat"?Laura2012-01-26T06:32:13Z2012-01-26T06:32:13Z
For some reason, people don't seem to think that fish feel anything, which is not true - but I think it's more of an "I can't see their feelings/they aren't warm and fuzzy like most farm animals" type of thing. I did recently read that bivalves like mussels might not have much in terms of sensory perception, but it's pretty obvious that fish and other sea life do.

I was vegetarian for most of my life, and am now pescatarian - I do not consider them the same, though sometimes when around new people, I may revert back to "I am vegetarian" so that I don't have to explain what I do and don't eat and why.

The reason I personally am ok with eating seafood but not other animals from an ethical point of view is because there are more wild-caught options and CAFO treatment is less of an issue. I still try to be aware of environmental impact and check the Monterey Aquarium's Seafood Watch as much as possible. Also try to be aware of mercury levels.

I also eat seafood because I have some health issues and my doctor really wanted me to make sure I was getting enough omega 3.

http://paleohacks.com/questions/92851/i-hate-organ-meats-and-seafood-whats-a-girl-to-do/92913#92913Answer by Laura for I HATE organ meats AND seafood. What's a girl to do?Laura2012-01-26T06:12:28Z2012-01-26T06:17:36Z
Sorry that this is written as a sort of streak of conciousness post - I tried to add as many tips as I could, but they aren't the most organized.

I was vegetarian for about 12 years and could not stand the smell of fish. I am now pescatarian and like most types of seafood, though some canned items and smaller fish like herring, sardines, and anchovies I don't like (even though it would be great if I did since most of them have great omega 3s and low mercury.)

Supplements - You can supplement with Megared Krill Oil - smaller and less fishy than fish oil pills. If you do regular fish oil, I actually think that the ones that are not enteric coated are better (personally, less digestive issues and no fishy aftertaste, even though that is what they are supposed to prevent!) Some fish oil supplements have lemon flavor to make sure you don't get a fishy aftertaste, and it does help.

Can't help with organ meats, but I can say that I found vitamin A supplements from animal sources, and that seems like a good option to me.

If you do attempt to integrate seafood, here are some suggestions:

Safeway and other grocery stores will often steam and season shellfish for you - we always get shrimp and crab legs there - order when you get to the store, and it's done in 5-10 minutes. No cooking or cleanup, and faster and cheaper than a restaurant. Also lessens fishy smell compared to cooking at home.

Try shellfish like crab to start out with. Delicious and not fishy tasting. Blue and alaskan snow crab are especially good - I am from Maryland so blue crab and MD crab soup is what got me to start eating seafood again in the first place. Steamed with butter, old bay, crab cakes (personally broiling with the recipe from Old Bay is the best option.) Snow crab is sweeter tasting and cheaper than blue crab.

For fish, go with fresh or frozen, not canned, if texture is an issue. I stick frozen in the oven or fry in olive oil and/or butter. Paprika and garlic too.

I never liked salmon with honey glaze or citrus like many restaurants want to serve it, but I love it if you treat it like a steak - with stuff like barbecue sauce, montreal steak seasoning, or A1, or teriyaki sauce. Chaka's MMM sauce makes everything better (though it is soy sauce based - but no oil or sugar)

I also had a tuna aversion, though am ok with Albacore sometimes now. (though watch mercury levels, because they are higher than in chunk light) I havent had chicken in years but albacore tastes more like what I expect chicken does, and not fishy - a big difference from chunk light tuna.

When I first started eating seafood, shrimp was another big texture issue for me - but now I love them steamed with some Old Bay and butter.

Tilapia is pretty safe in terms of taste - good, but not fishy.

http://paleohacks.com/questions/92059/what-improved-for-you-when-you-gave-up-wheat-grainsWhat improved for you when you gave up wheat/grains?Laura2012-01-23T00:33:06Z2012-01-23T16:42:42Z

I'm doing pretty good with eliminating soy and dairy, and am on the fence about legumes since Archevore is looking pretty appealing as a starting place for me.

Wheat and grains are right now the most difficult transition for me. I've severely cut back, but haven't cut them out. I understand theoretically why they are bad, but was wondering if I could get some responses about what specifically improved for you after going gluten free and/or grain free to get a better idea of what it affects and to help motivate me.

Thanks!

http://paleohacks.com/questions/91883/did-you-feel-extra-tired-when-you-started-paleo/91896#91896Answer by Laura for Did you feel extra tired when you started Paleo?Laura2012-01-22T01:28:14Z2012-01-22T01:28:14Z
I am on my first week as well, but I am coming from being almost sedentary - no CrossFit or major regular physical activity except for a few hours working with horses during the week. Adding more activity in, but nowhere near your level. And I only eat fish, so I have no idea what adding lots of red meat in will do to you.

I don't feel tired (actually stronger and more energetic) but I started with cutting out all dairy except butter (and am on grass-fed only now - Kerrygold is amazing!) and today is my first day with no wheat, legumes or soy. I don't think I am as low carb as many people yet.

However, at first I even though I would say I am more energetic, it's a different kind of energy - no sugar rush, sudden change - more evenly dispersed, and if I wake up in the middle of the night, no grogginess - I feel the same as any other time of day. In a way it feels a bit like being tired in that there is no major energy swing throughout the day and it is dialed down.

http://paleohacks.com/questions/91619/best-resources-to-start-out-with-paleo-for-pescatarian-former-vegetarianBest resources to start out with paleo for pescatarian/former vegetarian?Laura2012-01-20T17:47:15Z2012-01-21T09:33:31Z

My question is - what resources/model of paleo/primal, etc. might be best for me to start with? I have been to a number of paleo/primal websites (Robb Wolf, PaleoParents, Cordain, Whole 9, Mark Sisson, No Meat Athlete, Tim Ferriss and others) and seeing good info, but also getting somewhat confused by different recommendations. I haven't figured out the differences yet and would appreciate some guidance.

My background: I was ovo-lacto vegetarian from ages 14-26, and have been eating fish for about 2 years now. I realized that I have been too dependent on carbs, soy and dairy and have started eliminating them (starting with eliminating all dairy except for butter this week and cutting down on carbs and all processed soy.) I do eat fish and shellfish, but don't anticipate adding any other meats in my diet for awhile.

I've been reading different websites, and I am getting confused by different recommendations. Also, it's clear that some people are especially heavy on the red meat (which is fine, but not all that helpful to me at the moment) and others are more fish friendly.
Confusing differences include: I see recommendations to eliminate dairy, but on the other hand some are recommending grass fed butter, heavy cream, and even full fat yogurt. I have seen some recipes with parmesan and mascarpone cheese listed as paleo. Then I have seen some acceptance of legumes, and some people talking about 80/20 eating with some "treats" vs people that are completely paleo.

So, where should I start? What resources (websites, books, etc) do you recommend? What about foods to incorporate?

This is my first week and I have been eating mostly fruits and veggies, eggs, fish, and avocado and nuts. And some limited soy (tofu) legumes (split peas and lentils) and small amounts of bread and pasta.

Since weight loss is definitely a goal, I'm looking at decreasing fruits, carbs, avocado and nuts based on some recommendations I have seen. I am also looking at buying some Kerrygold butter, ghee, and possibly coconut oil.

Thanks!
