<p>I've been using a basic $50 Foodsaver from Kroger to seal my meats for cooking them sous vide. Unfortunately, it does not have a "liquids" setting, so I can't really add a liquid flavoring. While using only dry seasonings can still be tasty, I'm tired of putting up with this limitation. Does anyone know of an inexpensive vacuum sealer that won't suck all of the liquid out? <p>I probably rely on grocery store brand heavy whipping cream a bit too much for my fat needs. It comes with carrageenan and polysorbate 80 as thickeners/emulsifiers. I'm not willing to give up the cream on the "precautionary principle" alone, as it would be costly to find a source of higher quality cream. Is there any evidence that these would be doing significant harm in the amounts present in the cream? Does anyone know of an inexpensive alternative?</p>
<p>Update: I propose that we petition Organic Valley to start a line of heavy cream that does not contain carrageenan or any other additives. Given the quality of their pastured butter, I think they are enlightened enough to listen to demand for natural cream. Currently, their dairy products are sold throughout the US in Whole Foods, etc. Send them a short note if you want a healthier choice for your cream:</p>

I cooked the shanks in a ziplock bag full of the oil submerged in a 56C water bath for ~36 hours. Using the palm oil as a poaching oil seems like the best use of it, since the low temperatures do not destroy the color and aroma and the oil is reusable.</p>

I suspect that the "extra-virgin" extractions methods for castor oil yielding a clear product are not as effective as the older, high temperature pressing that yields a yellow product. The free fatty acid ricinoleate is the active ingredient in castor oil, and high temperature pressing of oil produces free fatty acids. So buy cheap, crude castor oil at a store catering to Indians or Mexicans rather than the fancy stuff at the drug store.</p>
<p>Acute injuries were the cause of death for paleos and HGs. This is one instance where modern medicine is prudent.</p>

You do not want the temperature to fluctuate much. Freezer burn comes from air exposure, so airtight packaging would prevent that. Properly packaged in a good freezer, meat should last for years.</p>
<p>Dried meat will literally last forever if stored in CO2 or nitrogen. When people say that confit or jerky will only last a few months, they are just avoiding lawsuits.</p>

Femurs, arm bones, and shanks contain yellow marrow in the hollow part that slides out when you cook them. Bones like ribs, hips, and necks are foamy/spongy inside, so there is no tasty yellow marrow inside. Boiling the bones in water to make stock seems to get some stuff out of the red marrow.</p>
<p>Yellow marrow is almost all fat and has a fragrant, grass-fed smell even from conventional, grain-finished cattle. I would guess that it is rich in fat-solubles.</p>
<p>I make bone stock by boiling bones for an hour with seasonings in a pressure cooker. Adding a cup or two of vinegar like apple cider vinegar helps to dissolve some of the bone. When it is finished cooking, the broth is not too sour to drink because the dissolving bone neutralizes the pH. The bones when finished crumble apart easy in your mouth, and the cartilage is jelly that has soaked up the flavor of the broth. I'm not sure if the glycosaminoglycans in cartilage can be digested and absorbed.</p>
