It should be a staple of your diet it you eat paleo. It gives a great amount of fat so that you can have energy throughout the day. I would just buy the most natural bacon you can find. Along with the other answer, nitrates do occur naturally so you shouldn't worry about them. There are higher concentrations of nitrates found in most coniferous/green plants and veggies that you're eating on a daily basis. Don't sweat it too much. If you work out I suggest three or four slices with four of five eggs for breakfast, it's the perfect meal before your workout or sport!
http://paleohacks.com/questions/111483/when-will-the-weight-loss-stop-i-want-to-build-muscle/111506#111506 Answer by RA for When will the weight loss stop? I want to build muscle! RA 2012-04-12T14:24:05Z 2012-04-12T14:24:05Z
I agree with Dave on this one, you want to eat more fat. Remember that when you are working out in any variety you need fuel. In a paleo diet fuel comes from fat not carbs, so through in some eggs, oils and ribeye (which helps on the protein)

I would also look into your workouts. It's OK if you work out a lot but keep the workouts short (30 -45 min) I would tell you to consider HIIT training. High intensity in a short amount of time. This will trigger your muscles faster than lifting or a longer period. Max out your weights.

If you tighten up those workouts, and eat more fat you should be good to go. I also recommend that you eat a gram of protein for every pound of body weight to see muscle gain. I use a protein called Carnivore, which is made from beef isolate, not only does it work really well and have a solid amino acid balance sheet, it is the best tasting supplement out there. (chocolate)

Keep in mind that when it comes to making a change all you need to do is usually change something simple. This will help you start to gain the muscle back. I don't want to sound like an advertisement but if you are looking to really start to make muscle gains I would invest in something like P90X and supplement that with your HIIT workout regime. You will see some good gains from that.
http://paleohacks.com/questions/111210/why-are-there-so-many-discrepancies-in-the-paleo-diet/111310#111310 Answer by RA for Why are there so many discrepancies in the Paleo diet? RA 2012-04-11T17:40:14Z 2012-04-11T17:40:14Z
A lot of people who start researching paleo/primal diets get a lot of info all at one time. It can be disheartening to see all of these different food lists on different websites. I like to keep it as simple as possible. These are my rules:

Never eat - grains, legumes, anything artificial, a lot of sugar.

Eat decent amounts of good fat. One thing you have to remember is that on a paleo diet you don't use carbs for your body's fuel you use fat. There is nothing wrong with animal fats, butter and ghee. Don't forget good oils too. Stay away from poly-saturated oils like Canola and Soybean.

Dairy - in small amount and in moderation. Some of the other paleo crew may not agree with me on this one. All in all dairy falls into a gray area. It has some good benefits, and can make things taste better, just don't go chugging milk everyday. The rule for dairy is it MUST be full fat and not messed around with. The reason for full fat is that the fatter the dairy the less lactose it contains, which is why people don't eat it on the diet. I use full fat cream in my cup of coffee in the morning. Other than that I use coconut milk for everything else.

What do I eat? The short answer is lots of plants and animals. anything in that spectrum is good. Nuts (not peanuts they're a legume) seeds, fruits (the less sugar the better) and anything that comes from animals, meaning eggs. Eat eggs, one of the more perfect foods out there, including the yolks!

That is a great question and I hope this helped. The first thing I tell someone to do so they don't feel overloaded with new information, is to cut out all grains for the first two weeks. This alone will make you feel like a million bucks. Studies have shown it takes at least two weeks to get gluten out of your system, with a full month being even better.
http://paleohacks.com/questions/128733/a-question-about-fat Comment by RA RA 2012-06-19T19:00:31Z 2012-06-19T19:00:31Z Are you taking any protein shakes? http://paleohacks.com/questions/122369/slow-weight-loss Comment by RA RA 2012-05-25T17:21:23Z 2012-05-25T17:21:23Z Can you give us some feedback on your current eating habits and exercise?
