I've been drinking gelatin tea. I just sprinkle some gelatin on a little cold water to "bloom" it, then fill the cup with hot water and my tea bag. As long as you drink it hot it won't thicken but I got called away from my desk for a while and returned to solid tea. I ate it with a spoon--it was good ;o)
You don't have to eat it in its solid state to get the benefits.

Flavoured or even plain coconut milk with gelatin is scrumptious.
There are many recipes online if you do a search.
I scored some discounted organic whipping cream yesterday, and was thinking of making a mousse with that, dark chocolate, and the unflavoured gelatin.
Fruit juice gelatin or to thicken Soup.
