If you are attempting a very low carb version of paleo (under 100g daily), then you are probably glycogen depleted, and the weight gain (and loss) is just the water that is stored in the muscles along with the glycogen.

It's a bit grey from a Paleo point of view, but (as long as you can tolerate it) you can't really beat dairy as a low-carb calorie source. Start eating heavy whipping cream with everything, and start upping your cheese intake.

I would not recommend adding an excessive amounts of nuts or refined sugar. Perhaps loading up on the butter/ghee, full fat coconut products, sweet potatoes (or any potatoes), fruit, etc would be more prudent.
