I have non celiac gluten intolerance, andI was looking for a low carb paleo snack, and I had some turkey jurkey, but I found out after I was done eating that the turkey jerkey contained wheat! If I were to purge myself, even though it's been a few hours, can I save myself the damadge? Or has it been too long, it doesn't make much of a difference how long it's been, or should I just let the poison run its course?

Firstly the damage has been done, second purging would do more harm to the stomach lining than gluten would. This sounds an awful lot like bulimia.
Listen to yourself. You're using words like 'penance'. Food is not a moral issue (religious dietary laws notwithstanding). As another non-celiac gluten sensitive person I'm going to tell you to stop, take the toilet time, and be mindful next time. And start thinking of food differently. Hours later I'm sure the damage has already been done anyway.
