Anyone buy non grass-fed ghee in bulk at Indian stores? Pros and Cons? Any brands we know for sure are or are NOT grass fed? I'm almost positive its not grassfed, but it might be a decent/necessary (affordable/accessible) option for some. (more)

@desmond Thanks for the ideas and the comment about heart was great b/c I also bought lamb, goat and beef heart, and a leg of goat. I was planning on doing the goat leg in the slow cooker tomorrow.

Grassfed, pastured dairy is higher in Omega3 fatty acids and CLA. What kind of Omega3s are in pastured, grassfed dairy?

A good fraction of it is ALA, the omega-3 not given enough credit by paleo folks (because it's the plant-sourced omega-3).

Get a dog, he/she will love you for those bits. Otherwise slow cooking them is a winner, although I think I'd trim them first and use them raw in my stock/broth.

I made about 1 lb of beef liver pate. It tastes exactly how it looks (like s***). I've found recipes for next time (soaking in lemon juice), but I have 1 lb of pate made that I can hardly swallow. Can I cook it or make chili out of it?

No, you can't. Liver has to be rare. If you overcooked it it is ruined forever.

Don't know Ireland, but in South America most beef (about 95%) is grass fed ad finished, from supermarket meat to the finest churrascarias (especially the churrascarias!). And most sheep meat is grass fed too.

I keep reading things about how grass fed beef has less saturated fat than grain fed beef. Does anyone know if that's true? I know that grass fed tends to have less marbling than grain fed, I'm mainly interested in the ratio of the fats.
