Sugar intake stimulates norepinephrine, which is a vasoconstrictor.. Cerebral vasoconstriction can cause a headache.

as long as you are staying sufficiently hydrated your headaches should subside in a few days. drink more water and see if it helps.

I never had headaches when vlc. Try adding some starchy carbs back for 2-3 days & see if they disappear. If they don't, you may want to look deeper to see if something other than diet is causing them...
