I know it's not exactly what you were asking but they do make gelatin from pigs in addition to cows. Great Lakes makes a good pig gelatin product for one.

You can actually just buy a bottle of GT or any other brand and use that as starter liquid for your first batch, and a SCOBY will grow on its own. May take a couple batches to get a robust SCOBY, but it'll work. I got a SCOBY from a friend though.... (more)
