I have seen recommended temperatures for making beef jerky/pemmican at 100 degrees f and 150 degrees f. Can anyone discusss the virtues or drawbacks of either? I've been doing it at 150 degrees.

It depends on where you are and where you want to be. What are your goals? If you would like to lose weight, then I would advise avoiding or limiting dehydrated fruit/meat. As you note, they are more dense and lend themselves to overconsumption.... (more)
