3 days? Not long enough. Give it at least a week. The lactobacillus need more time to flourish, make their acid, and kill the nasties.

The nutritional value is going to depend upon what you put in it. If you add one tomato, one carrot, one onion, etc., the juice is going to contain the nutrients from those fruits and veg.

what kind of juice are you missing? really the whole actual fruit is the only acceptible option if progress is being sought after. Breakfast is the worst time to eat it though... imo.

I've heard good things about water kefir. Kombucha is fizzy and slightly sweet...maybe that would be a good option? I love it. It has something like 4 g sugar in a bottle. But it tastes like it has so much more. I like GTS Gingerade. (more)

Mine gets gooey sometimes, too, with the cabbage basically disintegrating. I attribute it to not enough salt. When it happens to me it can't be recovered. I wouldn't risk eating it.

I don't, personally, but from what I hear, cowboys used to drop the eggshells in their coffee pots to extract the calcium into their morning coffee. Just something to consider; you don't necessarily have to consume them whole.

I do not. I love real oranges, yet I only have the real fruit, not the juice. I think having too much fructose is not good for your health, and orange juice has lots of fructose!
