Your housemate has no idea what they are talking about. Ketones are produced as the byproduct of the breakdown of fatty acids - not your muscles. The energy bearing byproduct of muscle catabolosim is glucose, not ketones. (more)

From what I've read, gluten intolerance (or just allergies and inflammation in general) can cause everything from a headache to cancer. So, sure, itchy eyes seems pretty straight forward.

Ethanol -> Acetaldehyde -> Acetic acid -> Acetyl-CoA -> Ketone bodies The last step of conversion to ketone bodies would not necessarily hapen, especially if you're not low carb and have enough glucose at the time you drink the alcohol. (more)
